Rob’s Ribs, a faction of Butcher Paper BBQ of Opelika, has announced its grand opening date for April 19 and is planning to have a soft opening.

“That is when we are planning to open the dining room,” said owner Mark Coxwell. “We will be open for lunch and dinner.”

Once open, Rob’s Ribs will be serving a lot of things that they do not at Butcher Paper, Coxwell said. They will have baby back ribs, beef ribs and chicken-fried ribs. Specialty sandwiches will be added to the menu not long after. They will also have a variety of appetizers and sides including fried pickles, hush puppies, cole slaw and onion rings. Breakfast foods and salads will also be on the menu.

“The fried ribs are excellent,” Coxwell said. “The fried pickles are my recipe. They’re the best in town in my opinion. I’m really excited about the beef ribs. We’ve had a lot of people ask us to cook beef ribs, and now we have the capacity to do it. I’m really excited to get those going. Our baby back ribs are just out of this world good.”

Coxwell and his wife, Anna, also added a specialized mixed drink menu and installed a 10-tap beer tower. There are also personalized branded tables and a large outdoor patio, something that beefs up (no pun intended) the atmosphere.

“We are going to have a specialized mixed drink menu curated by John Emerald Distillery,” Coxwell said. “We have a large outdoor patio area that is going to have 10 picnic tables and two ADA accessible tables. We do have the bar, the handcrafted bar.”

Furthremore, Rob’s Ribs is offering different levels of catering from small lunches to large events and weddings. The business announced their move into the what was Mike and Ed’s Bar-B-Que at 307. N. College St. in early March.
